We all want to keep things as simple as possible this weekend and next week. So we can enjoy our families and focus on Christ, the promised Savior.

Here is my Christmas gift to you…a simple dinner recipe. I grew up calling it “Company Chicken” (because we made it when company came over) and my husband grew up calling it “Special Chicken”. Our first official “date” my husband made Special Chicken for me…a common bond we didn’t know!

Special Chicken

  • Chicken Breasts (I buy a pkg with 6 breasts)
  • Dried beef (comes in a little glass jar)
  • Pkg of bacon
  • Sour cream
  • 2 cans of Cream of Mushroom soup

Preheat oven to 275 degrees.

Grease a 9×13 dish. Place a layer of dried beef on bottom of dish. Wrap chicken with a piece of bacon (I like to cut off the extra fat from the chicken and sometimes cut the chicken breasts in half if they are really large). Then in a separate bowl mix sour cream with the two cans of soup. Pour that sour cream/soup mixture on top of the bacon-wrapped chicken.

Cook for 3 hours.

Serve with white rice, vegetables and salad. My husband loves to put the chicken on top of the rice and pour some of sauce on top of the chicken. Enjoy!
