1. Walking Tacos

Last Friday afternoon we took the boys to the State Fair of Texas. There is always a contest between vendors for the best food items. Of course, this year being a pregnant mama, I had to try some of the winners. The boys tried the fried bubble gum (winner of the most creative award)…that did not appeal to me.

I had been craving the Walking Tacos…which was fortunately next to the fried bubblegum.

 It was soooo good that I just couldn’t share it with my husband or boys…so we bought a second one.

AND when I went to the grocery the next day I bought the ingredients so we could make our own walking tacos at home.

Make taco meat as you normally would (brown the meat, add the taco seasoning packet & water). Crush up the chips some then cut across the top of the Doritos bag lengthwise. Add the meat to the chips and then top with lettuce, cheese, tomatoes, sour cream, salsa…YUM!! Dig in with your fork and just walk around the house. =)

2. Butterfly kit

My sister-in-law bought this great birthday gift for the boys. Due to the extreme heat this summer, we were unable to order the caterpillars that went with the kit until now when it was safe to ship them.

They arrived this week…the day after my younger two boys heard the “Butterfly Guy” speak at their school. Perfect timing.

Already we’ve seen the caterpillars grow in size and can’t wait to watch them build their chrysalis.

3. DIY jewelry

A couple Sundays ago I admired a necklace a girl was wearing at church. I looked at a couple stores to find one similar and decided spontaneously that I was just going to make my own!

I went to Michaels and found the beads, string, fasteners, clamps and got to work. I had no idea what I was doing but it ended up turning out great and I will be wearing this necklace tomorrow at the Relevant Conference I’m attending! yippee!

4. Providence book fair

Every year the school my oldest son attends holds a book fair. What makes it such a wonderful event is the large amount of quality, “non-twaddle” books they offer.

If you live in the Dallas area and you are interested in quality literature for your children (maybe even gifts from grandparents for Christmas), check out the Providence book fair. It will be held Tuesday, November 1, 8 am to 4 pm and Wednesday, November 2nd, 8 am to 12 pm. The address for the school is 5002 West Lovers Lane.

5. Weekends away

I shared yesterday about how God had provided a way for me to attend the Relevant Conference this year. I’m sure it is obvious why this is a favorite… and will become even more of a favorite after I get to experience it.

I am very thankful for the opportunity to take time away from my traditional responsibilities, fully trusting that my children are in capable hands and that, ultimately, they are the Lord’s.

I am thankful for a husband who supports the creative outlet and ministry that “blogging” has become.

I am thankful for parents who happen to be back in the country and for my mom who is healthy enough to be able to very skillfully take care of the boys.

I am thankful for Christian women who desire to know God more and whom I will be able to get to know on a deeper level this weekend.

I am thankful for this one last “hurrah” before the holidays and before baby #4 arrives…to just focus on who I am and how much God loves me.
